Eclairs "Milk"

I would describe this candy as creamy and simple. Simple is a complicated word when it comes to candy. Many candy companies will make treats that are overly complicated and sell more on gimmick than quality of the treat. Other times candy companies make treats that are only a few (or even one) ingredient. Sometimes simple is better, but only when the treat is made well. For a treat to be simple and good it must have a great ratio of ingredients, and those ingredients must be of a high quality. Simple can also be a bad thing, when a simple candy is made cheaply it’s just bad, and there’s nothing to hide all of the faults.

This candy isn’t really spectacular, but it isn’t bad either. It’s simple, but a few of the ingredients keep it from falling into the bad category. I feel as though the creamy centre is the thing keeping this candy above water. The caramel outer layer is fine, but it’s a little crusty and lacks any strong flavour. This is where the creamy milk centre works. It takes the simple caramel and elevates it a bit to something creamier. A good caramel can go two ways, it can either have a great burnt flavour, or a nice creamy flavour. If it doesn’t achieve either of those, caramel generally just tastes bland. This is likely a fairly bland caramel, however the creamy centre pushes it in the right direction.

I feel like this candy could be improved, even without adding a whole bunch of ingredients. I feel as though the caramel could have been better, softer, and maybe with a slightly burnt flavour. The burnt caramel would have been an amazing contrast to the really creamy centre too. A softer caramel also would have melted in my mouth a little bit better.

This candy was saved by one particular ingredient. It’s simple, but one of the two main components did all the heavy lifting.
