Rhubarb & Strawberry Semifreddo


I never thought I liked rhubarb, I never really thought I hated it either. It seems to work in certain pies and some desserts in combination with other fruit, but I always thought that if you took it out, I'd probably still love the pie or dessert without the rhubarb. This is what I thought before I took a bite into this bar. My expectation was that I would be eating a strawberry bar that might have a slight tart flavour. Instead what I got was a rhubarb bar with the slight sweetness of strawberries. Best of all, rhubarb really seems to work with chocolate, and I never expected that.

The key to the success of this bar is the balance of the flavours in the filling. Too sweet and it would have failed, too sour and it would have failed. The rhubarb as the hero of the bar is surprising, but since it was mixed with the perfect amount of cream and strawberry it's just fantastic. I also want to make sure I give the chocolate the credit it deserves as well. Without good quality chocolate both in flavour and texture this bar would not have worked at all. This bar is really an example of how to use fruit and chocolate in a wonderful way.

I have to admit that I can't remember having ever tried a rhubarb and chocolate combination before, but I do hope it's not the last time. It's really an impressive flavour combination that should be used more often.
