The first thing I should do, before going off on any kind of rant or unexpect praise, is describe this little round treat. Behind this red wrapper is something that at first would appear very simple. It's basically a ball of almond paste, with a cherry center. That might seem rather simple at first but really this treat is far from simple.

The complexity of this treat works in two ways. First in the quality of ingredients and the second is the texture of the almond paste. The cherry flavour is perfect in proportion to the rest of the treat, and this is something that’s actually really hard to balance. Best of all it's a real cherry flavour, and that works so nicely with the almond flavour. The almond paste's texture is also really spectacular. It's smooth, creamy and not gritty at all. It almost feels and tastes like you're eating a raw almond dough instead of an almond paste.

I'm always a little nervous when it comes to eating almond pastes. On many occasions I find them to be way too powerful a flavour and way too gritty in texture. To me almond paste is like the playdough of the candy world. It can be molded into some amazing things, but often it's horrible to eat. In this case the treat’s look is fairly simple, but the taste and texture is complex and really tastes great.
