This bar presents and problem and a new discovery. The new discovery comes from the idea of mixing cinnamon with dark chocolate. I think as an experiment it totally works, but it has to be done just right. Keep in mind that I’m talking about the simple mixture of cinnamon and dark chocolate, nothing else. I’ve had a few chocolate treats with truffles and creamy filling that had cinnamon, but this is just plain dark chocolate and cinnamon. So as an experiment to answer the question as to weather or not cinnamon works with dark chocolate, it’s a success.
The problem with this bar comes from the quality or tempering of the chocolate. As far as dark chocolates go, this chocolate is fine, it’s not amazing and I’ve had many better dark chocolates in my day. I kind of regret not tasting Alluvia’s regular dark chocolate to really get a handle on where it’s gone wrong, but the flavour is a bit of a mystery to me. I do taste dark chocolate, but it takes a while for that flavour to really sink in. The first few bites you really only get a slight hint of dark chocolate and a slightly waxy texture to the chocolate. After a few seconds the cinnamon flavour then overtakes everything.
When I finished this bar all I had was a cinnamon flavour lingering in my mouth. There was a brief moment when it felt like the slight dark chocolate flavour and cinnamon had a balance, and it was good. However the dark chocolate flavour died off leaving almost entirely cinnamon.
What I think is that it is possible to blend cinnamon and dark chocolate, and if done well I think it would be really special. I don’t think Alluvia has managed this balance, but I appreciate the effort and creativity.
