When you think about ice cream, it’s not a far stretch to think about breakfast. It’s not uncommon to put nuts on ice cream, and nuts are common in cereal. Milk is also the prime ingredient in ice cream, and you put milk on your cereal. There’s even occasions when cereal (mostly the super sugary kind) has either been added to ice cream or some ice cream treats might be themed to a popular (almost always sugary) cereal. This bar is kind of twisting this narrative a little. Rather than cereal being added to a dessert, this dessert is a trying to be a complete bowl of cereal.
The cereal of choice is corn flakes and the ice cream is just smooth and creamy. It might be a little vanilla too, and lots of sugar. It’s not that they really managed to nail the texture and flavour of a normal bowl of cereal, but they’ve got the right vibe. The interesting thing is that this is a Thai ice cream treat, and Thailand isn’t really known for its cereal for breakfast. Rice and fish are more common, so it makes me wonder who came up with this.
I also wonder if maybe when Thai people eat cereal with milk that they might add lots of sugar. Which brings me to how you could make this bar yummy, unique and more authentic. The first thing is simplify the ingredients. Cut back on the vanilla and sugar, and the sugar you should cut a lot. Instead of a super sweet cream, make it refreshing. You could also add more cereal into the ice cream, as it stands now it’s only on the hard chocolate shell. With a few simple adjustments, it would feel like you’re eating a bowl of frozen cereal and might even be a nice breakfast.
