You would think that covering up a yummy piece of dried fruit in chocolate would be a simple way to improve it, but it’s not. While there is really only two ingredients to this treat, there’s a lot of thought that has to go into making it work. Most importantly is the balance between the flavour and type of chocolate against the flavour of the mango. The balance can be found in what kind of chocolate you use, such as milk, white or dark chocolate (or how dark a chocolate you go for). You also have to think about how much chocolate you add to a treat, both for flavour and for texture.
Texture wise I think these chocolate covered mangoes are fine. The mango is not overpowered by the chocolate and the chocolate is not over powered by the mango. There’s even a nice creamy texture that comes with the chocolate that works well with the mango. Flavour wise on the other hand things don’t work exactly as well. There’s something about this chocolate that seems a little too light. It could be that it needs a bit more cream/milk, or it might be that it could use more cocoa. It could also be both cocoa and milk that are needed. It just felt like the chocolate, flavour wise is a little weak.
I wouldn’t say that this imbalance ruined these chocolate covered mangoes, but I feel like they could be much better. I don’t think I would ever seek these out, but if offered I’m happy to eat another one. It’s a very simple snack that works fairly well. It could work much better with a higher quality and darker chocolate, but the milk chocolate they used certainly didn’t ruin anything.
